Devils Backbone Brewing Co. is hiring now for a Sous Chef to join our Basecamp Brewpub in Roseland, VA. This person is vital to for the kitchen to operate at the desired level, maintaining the kitchen schedule, assisting the Executive Chef with various duties when necessary, and essentially planning and directing food preparation. The Sous Chef is the shift supervisor and solves daily problems and trains and develops our staff, This position works autonomously under the general loose direction of the Executive Chef and assumes the role of Executive Chef in his/her absence. This person will be a leader that encapsulates the broadness fo the kitchen operation as a whole while mainting a sense of order during high-volume operations. 
 
Job Responsibilities 
  • Assumes the operational duties of the Line Cook II position when needed.  
  • Assumes responsibility for the administrative tasks of running the kitchen (scheduling, inventory, payroll, etc.). 
  • Trains and coordinates the training of kitchen staff for growth and development.
  • Ensures proper training on new recipes for consistency/quality.
  • Delegates appropriately.
  • Implements proper quality control procedures guaranteeing standards.
  • Fills in for the Executive Chef when absent.
  • Manages ticket orders to expedite kitchen processing.
  • Checks regularly for proper plating, garnishing, temperature, etc.
  • May hire/discipline/terminate staff.  
  • Onboards and trains new employees.  
  • Keeps staff abreast of issues, concerns and company matters.  
  • Alerts the Executive Chef of any issues.  
  • Other duties as assigned.
Qualification:
  • Level knowledge of food and beverage industry – back of house operations
  • Ability to manage personal responsibilities in a high-stress, fast-paced working environment
  • Ability to operate all equipment in the kitchen.  
  • Ability to follow oral and written instructions.
     

Education and Experience

  • Significant Restaurant Kitchen experience – 3-5 years minimum, depending on quality of experience.
  • High-volume experience preferred.
  • Virginia Drivers License


Physical Conditions and Nature of Work Contacts

  • Regular contacts are made with individuals from within the Back of House and Front of House divisions.
  • Communication is usually cooperative in nature.   
  • Work takes place in hot, wet, humid, and loud environment for long periods.
  • Lifting up to 60 pounds repetitively.
  • Conducts work in a standing position; job requires frequent standing, walking, bending, stooping and lifting. 
  • Requires frequent operation of a variety of kitchen machine/equipment.
  • Requires the ability to manipulate large quantities of food, dishware, cookware, etc. with hands.
